easy garlic lemon chicken

I haven’t posted about cooking in awhile and when I stumbled across this recipe for a delightfully simple marinade, I knew I’d have to pass it along.  I love lemon and in this household we really love garlic, so it instantly caught my eye.  Not to mention the fact that it looked pretty foolproof.

Now the original recipe was for kabobs, but I was in a rush when making this and we didn’t feel like setting up the grill and dealing with all that.  So I decided to sauté the chicken and make a salad to go along with it.  Well… actually, James made the salad (he would want me to tell you that).

Though it was tasty, I do think it would be even better grilled with lots of colorful grilled vegetables and probably couscous (my Mom would want me to tell you that… I don’t really like couscous).  Also, the lemon and garlic flavors just beg for a early evening summer grilling.  I mean, they’re basically the flavors supreme of the grill.  Don’t you agree?
