guacamole & pita chips

When I was living back in the Northeast, I never really paid much attention to the mighty avocado.  However, when one moves to southern California it's pretty hard not to fall in love with this wonderful little fruit (it's a fruit, right?  It's one of those ones that always throws me off...)!  On Sunday I had an afternoon to myself and a squishy avocado, so I decided to make guacamole and also baked some pita chips to go with it.

We'll start with the pita chips.  Now all I had on hand (you'll hear that phrase a lot throughout this post) were some torillas, but normally I like to make pita chips with, well, pita bread.  They come out a little bit thicker.  However, the tortillas worked just as well.  To make them you will need:

Pita bread or Tortillas
Olive Oil
Salt (preferable kosher salt... of course I didn't have any)

Heat your oven to 400 degrees.  Cut your bread into wedges, like you would a pizza.  Brush both sides of each wedge with olive oil.  Place on a cookie sheet or baking pan.  Sprinkle wedges with salt.  Bake for 5-7 minutes.  I'd definitely check after 5 (especially if you're using the thinner tortilla bread) and you're looking for the bread to just start to brown.

Success!

Now for the guac... there are many different ways to make it and to also tweak it to your personal tastes.  What I made was a very simple recipe that I made up with what I had on hand.  So this is by no means the mother of all guacamole recipes, just Melina's Super Simple Needs-To-Go-Grocery-Shopping version.

Avocado
Clove of garlic (if you aren't a huge garlic fan use a little clove or half of one per avocado)
Lemon (normally I'd use a Lime, but you know the drill...)
Pinch of salt

Take the avocado and cut it in half like so...

Use your knife to take out the seed.  Then make crosswise slices into the inside of the avocado.  Scoop the insides into a bowl.

Now mash up the avocado to your guacamole consistency of choice.

Mince your garlic (here you could also chop up onions, tomatoes, cilantro, etc) and prepare a slice of lemon/lime.  Squeeze a bit of lemon/lime into the avocado and add the garlic.  Mix.  Add the pinch of salt to taste.  Mix.

Now enjoy!  Really it's all about making it to your taste.  I love that, for me, one avocado makes a great little snack meal (it's a thing), so it's perfect for when I'm alone and in one of those fussy moods where I want something between a snack and a full meal.

  1. My mouth is watering for avocado here in the middle of Kansas where they are so expensive in the winter. I love to split one with my husband and eat it right out of the rind with a spoon. It's like healthy ice cream.

  4. This past summer I really got into the avacado - love guac or even just plain sliced w/ some tomato and balsamic vinegar - YUM! Got strung out on a two avacado a week habit so had to go cold turkey since they contain so much fat (I know, I know, it's good fat but all that good fat was making me fatter). Now I'll treat myself once in a blue but I do miss my old friend...
