avocado cucumber sandwich

I have long been a fan of cucumber sandwiches.  They're just so simple to make and yet they seem sort of adult and different to me.  Regardless of the reasons, I love them whole-heartedly.  Now as I mentioned before, I've been on an avocado kick recently and I decided to see if these two obsessions of mine would work together.  So I mashed up half an avocado and spread it on top of the cream cheese of my cucumber sandwich.  Needless to say, it was a match made in heaven and I am thoroughly addicted!

All you need are some cucumber slices, cream cheese, avocado and bread.  Like I said, super simple, but a departure from the norm.  I also like to add salad greens or alfalfa sprouts if I have them.

  2. That looks absolutely fresh and delish! A sprinkle of fresh parsley and a pitcher of iced tea and it would be the perfect lunch for a summer afternoon.
