mexican rice casserole

The other day I was browsing through For The Love of Cooking and seriously, I dare you to browse through that blog and not plan your next week's worth of meals.  So delicious.  Anyway, I stumbled across this recipe for Mexican Rice Casserole and it instantly piqued my interest.  As I've previously mentioned, burritos are sort of a staple in this household (apartmenthold?), but I felt like this would be a nice way to shake things up and still get our Mexican food fix

I deviated a bit from the recipe by adding a layer of red peppers as opposed to tomatoes since neither James nor I really like whole tomatoes.  I also decided to throw some monterey jack cheese on top along with cheddar since we had both lying around and I'm a big proponent of drowning food in cheese.

I mean, look at that.  How glorious is cheese?  It always boggles my mind that there are people whose hearts are filled with hate and anger when there is such a wonderful thing as cheese in this world.  Do you think they don't know about it??  Pretty much any bad day I have gets instantly better once I introduce cheese into it.  But hey, I'm just a simple girl.
