I haven't done a food post in awhile and since it's the season of comfort food chicken burritos have become really popular in my apartment. Honestly, they're pretty easy to make and customize (like pizza!) so it's a great meal to satisfy people with different tastes.
First I like to parboil a couple chicken breasts for about ten minutes just to get them mostly cooked. At the same time, I start cooking the rice (am I the only one that always underestimates how loong rice takes to cook??) according to the package.
After the chicken is done, I shred it (wait for it to cool down a bit... seriously. I didn't... it hurts) before adding it to the spices.
Now I like to save time and just use a burrito mix and Lawry's is really good. You add a bit of water, about 1 & 1/4 cups, to a frying pan and then simmer. I also like to add a bit more spice to the sauce, so usually I shake in some red pepper flakes and more oregano or some parsley. You could obviously customize this to your preferences or make a spice mix all your own.
Add the chicken and some cheddar cheese to the simmering sauce and cook for about ten more minutes, less if your chicken was cooked through after you parboiled it. Use this time to cook up some beans, chop up some veggies and warm up your tortillas (30 seconds in the microwave!).
Pile all the ingredients on your tortilla and enjoy!
